We make LawDawg Jerky fresh in small batches. While our website might show an item in stock, it may not be ready to ship immediately. We'll do our best to get it out ASAP. If there's a longer delay, we'll reach out to you for your preference.
First of all, it is not mold or anything bad – this is, in our opinion, the best part!!! Unlike other jerky, which is ultra-processed, our unique low-and-slow preparation renders the fat, making our jerky THAT much more flavorful and savory! After rendering, the liquid fat sometimes collects on the slices of jerky and, after cooling/drying, congeals slightly and turns an off-white(ish) color. This tends to happen more often on the brisket than other cuts, but still may happen across the board.

We strive to get your snacks to you as fast as possible, sometimes same day. If you need to
cancel or change an order, you must do so quickly and before the carrier picks up your package. Refunds will not be honored if your product has already shipped.
Our jerky is made from minimally-processed whole meat roasts. This means that it comes with fat, collagen, connective tissues and fibers, which are actually all great for humans. When those collagens and connective tissues are dried, they become hard. Those pieces can certainly be (carefully) consumed, but if not preferred,can easily be snapped off. Please use your own taste and judgement here!
LawDawg Jerky is made from real, whole food. Each bag may have a different fat-to-meat ratio. We aim to include a variety of meaty and fatty pieces, but it will vary. If you're unsatisfied, please reach out with photos of the product and pack date, and we'll work to make it right.
3 out of 5 of our current flavors are gluten free – Salt & Pepper, Spicy Salt & Pepper, and Brisket are all gluten free. Unfortunately, the teriyaki sauce that we dredge our teriyaki and spicy teriyaki into does contain wheat products.
The white granular residue on your jerky is natural sea salt, hand-applied to each piece. Unlike other companies that dip their meat into a salt solution, we hand salt every tray. This means each piece might not be exactly the same. If it's not perfectly salted to your taste, simply add more or rub off some salt to adjust.
